- 3 tbsps poppy seed
- 1 stick butter
- 1/4 cup whole milk
- 1/4 cup lemon juice
- 1 1/2 tsps lemon peel
- 2 large eggs
- 1 cup sugar
- 1 tsp salt
- 1/4 tsp baking soda
- 1 3/4 tsps baking powder (sodium aluminum sulfate, double acting)
- 2 1/2 cups white flour
Directions
- Mix the flour, baking powder, baking soda, salt, lemon peel, and poppy seeds.
- Melt the butter and let it cool. Mix with the remaining ingredients.
- Combine the two mixture. Make sure there are no lumps.
- Divide batter evenly between muffin cups.
- Bake in preheated oven at 350°F for about 20 minutes or until the tops spring back when lightly touched.
