  • 1 3/4 tsps baking powder (sodium aluminum sulfate, double acting)
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 tsps lemon peel
  • 1/4 cup lemon juice
  • 1/4 cup whole milk
  • 1 stick butter
  • 3 tbsps poppy seed

Directions

  • Mix the flour, baking powder, baking soda, salt, lemon peel, and poppy seeds.
  • Melt the butter and let it cool. Mix with the remaining ingredients.
  • Combine the two mixture. Make sure there are no lumps.
  • Divide batter evenly between muffin cups.
