Ingredients

  • 1/2 cup deep-fried pork rinds
  • 6 tbsps cream cheese
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup unsweetened whipped heavy cream
  • 1 tsp garlic powder
  • 1 dash black pepper
  • 1 dash salt
  • 5 cups cauliflower

Directions

  • Preheat oven to 375 °F (190 °C).
  • Cut cauliflower into small pieces and steam until tender, approximately 5 minutes.
  • Remove and strain.
  • Melt cream cheese in a medium saucepan over medium heat. Whisk 1 cup cheddar cheese, pepper, garlic, and salt. Once cheese is melted remove from heat
  • Transfer cauliflower to a 9x9" baking dish. Pour cheese mixture and toss to coat. Sprinkle remaining cheese and crushed pork rinds on top.
  • Bake until bubbly, about 20 minutes.
