  • 1 lb lean ground beef
  • 1/2 cup tomato paste
  • 1/4 cup chopped onion
  • 1/4 cup chopped green peppers
  • 1/4 cup chopped red peppers
  • 1 cup chopped or sliced tomatoes
  • 1/2 tsp or 1 packet mustard
  • 1/4 tsp black pepper ground
  • 1/2 tsp hot pepper
  • 2 cloves garlic, chopped
  • 1/4 cup chopped scallion (2 stalks)
  • 1/2 tsp ground ginger
  • 0.12 tsp ground nutmeg
  • 1 tsp orange rind
  • 1/2 tsp thyme, crushed
  • 1/4 cup bread crumbs

Directions

  • Mix all ingredients together.
  • Place in 1-pound loaf pan (preferably with drip rack) and bake covered at 350 °F (175 °C) for 50 minutes.
  • Uncover pan and continue baking for 12 minutes.
