  • 1 tsp taco seasoning
  • 2 cups water
  • 1/2 cup slices waterchestnuts
  • 5 oz frozen carrots
  • 2 packets onion soup mix
  • 5 oz frozen onions
  • 1 cup broccoli
  • 5 oz frozen cauliflower
  • 5 oz frozen spinach
  • 5 oz frozen green peppers
  • 2 cups tomatoes, with juice
  • 1 head large cabbage, chopped

Directions

  • Put water and all the vegetables in large pot.
  • Bring to hard boil and add onion soup mix and packet of taco seasoning mix.
  • Lower heat and cover.
  • Simmer until vegetables are tender.
  • Note: this soup can be enjoyed as a meal replacement or a healthy in-between meal snack.
