  • 1 tsp ground cinnamon
  • 1/4 cup almond milk
  • 1 cup dark chocolate chips
  • 1/2 cup coconut oil
  • 4 large eggs
  • 1 cup sugar
  • 15 oz canned pumpkin
  • 1 large egg white
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup water
  • 1 1/2 tsps baking powder
  • 1 tsp baking soda
  • 1/4 cup packed brown sugar
  • 3 cups all purpose flour

Directions

  • Preheat the oven to 350 °F (175 °C). Grease and flour muffin pan or use paper liners.
  • Mix sugars, oil and eggs. Add pumpkin, milk and water.
  • In separate bowl mix together the flour, baking soda, baking powder, spices and salt.
  • Add wet mixture and stir in chocolate chips.
  • Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes.
