Ingredients
- 1 cup chopped young green onions
- 12 oz turkey light or dark meat (skin and bone removed, smoked, cooked)
- 1 cup sugar snap peas
- 1/2 cup dry quinoa
- 1/4 cup less sodium soy sauce
- 1 cup chopped sweet red peppers
- 1 bunch broccoli
- 2 cups cooked mushrooms (fat not added in cooking)
Directions
- Rinse quinoa then place in saucepan with 1 cup water. Bring to a boil then reduce heat and simmer for 15 minutes.
- Wash and chop vegetables, then put in a lightly greased skillet. Stir fry until crisp-tender.
- Add soy sauce and desired seasoning, then mix in quinoa.
- Put in smoked turkey and stir for a few minutes.
