Ingredients

  • 14 1/2 oz lite coconut milk
  • 1 tbsp light brown sugar
  • 2 tbsps red curry paste
  • 24 oz stir fry teriyaki vegetables
  • 12 oz black soybean tofu

Directions

  • Warm coconut milk, curry paste and sugar. Simmer 5 minutes
  • Rinse vegetables and drain well.
  • Add vegetables to sauce and simmer until warmed through.
  • Drain and cube the tofu.
  • Add tofu to the pan, cover and heat through stirring gently to coat with sauce.
