Ingredients

  • 30 oz canned black beans
  • 5 oz baby arugula
  • 2 cloves garlic
  • 2 medium red sweet peppers
  • 1 lb sweet potato
  • 1 lime
  • 1/2 cup olive oil
  • 2 tbsps red wine vinegar
  • 1 tsp dijon mustard
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin

Directions

  • Peel and medium dice sweet potatoes. Sprinkle with 2 tablespoons olive oil, salt, and pepper to taste. Roast at 400 °F (205 °C) for 15 minutes or until tender.
  • Rinse and dry black beans.
  • Wash, seed, and medium dice red pepper.
  • Peel and mince garlic. Add to small bowl with remaining ingredients and whisk and set aside.
  • Put together salad, toss and enjoy.
