Spicy Chicken Stir-Fry

Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 2 cloves garlic
  • 2 tbsps olive oil
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 cup chopped red pepper
  • 1 hot chili pepper
  • 1 1/2 oz cornstarch
  • 6 tbsps soy sauce
  • 1/2 cup chicken broth

Directions

  • Sauté garlic and onion in olive oil for 3-5 minutes.
  • Add sliced chicken to pan and cook until no longer pink.
  • Add green pepper, red pepper, chili pepper, and chicken stock.
  • Cook until vegetables are at a consistency that you prefer.
  • In small bowl mix cornstarch with soy sauce.
  • Add soy sauce mixture to stir fry stir, sauce will thicken.
  • Serve over brown rice.
