  • 3 cups cubed sweet potatoes
  • 1/2 cup chopped red onions
  • 1 stalk medium celery
  • 1/2 cup chopped green pepper
  • 3 tsps or 1 packet mustard
  • 1 tbsp olive oil
  • 1 oz plain yogurt

Directions

  • Skin the potatoes and chop into bite sized pieces.
  • Put into a pot of water to boil.
  • Cup up the remaining vegetables and add to a large bowl.
  • Boil potatoes until slightly softened. approximately 5 minutes.
  • Add potatoes to the vegetables. Add mustard and olive oil.
  • Stir. Refrigerate for 30 minutes or longer before serving.
