Thai Sweet & Sour Stir Fried Pork

Ingredients

  • 4 cloves garlic
  • 1 medium red onion
  • 1/2 cucumber
  • 1 large red pepper
  • 2 plum tomatoes
  • 1 tbsp cilantro
  • 3 small scallions
  • 2 tbsps fish sauce
  • 3 tsps sugar
  • 3 tbsps vegetable oil
  • 4 oz pineapple
  • 12 oz boneless pork

Directions

  • Slice pork into thin strips.
  • Heat oil in large wok and add the finely sliced garlic.
  • Add pork once garlic is golden and stir-fry for 4-5 minutes. Then add sliced onion.
  • Season with fish sauce, sugar, and ground black pepper. Stir in cilantro.
  • Stir-fry for 3-4 minutes until pork is cooked through and onion browned.
  • Add all the vegetables sliced longways (cucumber, red pepper, scallions and small wedged tomatoes).
  • Add pineapple chunks and stir-fry for another 3-4 minutes. Enjoy!
