  • 1 lime
  • 2 kiwi, peeled
  • 3 leaves mint
  • 1 pint blueberries
  • 1 mango
  • 1/2 fresh pineapple
  • 1 pint strawberries

Directions

  • Chop the pineapple, mango, strawberries, and kiwi and place in a bowl.
  • Chop the mint fine (it’s very strong so a little goes a long way), and add to fruit.
  • Add the blueberries whole and then squeeze the juice of 1 whole lime over fruit, mix and serve.
  • You can make this the night before, but I would recommend adding the lime juice and mint shortly before serving.
  • Note: you can chop the fruit in larger or smaller pieces depending on whether you want to eat it like fruit salad or on fat free tortilla chips as a salsa.
