  • 2 1/2 cups cooked instant white rice
  • 2 cups peas and carrots (frozen)
  • 2 large white eggs
  • 1/4 cup less sodium soy sauce

Directions

  • In a hot skillet, put white rice with vegetables and soy sauce. Stir until combined.
  • Move rice to the side of the skillet.
  • Add in scrambled eggs and let it cook for a minute then mix everything.
  • Serve hot.
