Ingredients
- 2 1/2 cups cooked instant white rice
- 2 cups peas and carrots (frozen)
- 2 large white eggs
- 1/4 cup less sodium soy sauce
Directions
- In a hot skillet, put white rice with vegetables and soy sauce. Stir until combined.
- Move rice to the side of the skillet.
- Add in scrambled eggs and let it cook for a minute then mix everything.
- Serve hot.
