Ingredients

  • 1 cup parmesan cheese, shredded
  • 1 medium onion, finely diced
  • 2 medium celery stalks, finely diced
  • 2 medium eggs
  • 1 tsp dried basil leaves
  • 1/2 tsp thyme leaves
  • 1/2 tsp ground mustard
  • 4 tbsps butter, melted
  • 1 tsp olive oil
  • 2 tbsp mayonnaise
  • 2 cups vegetable skallops

Directions

  • Saute onion and celery in olive oil.
  • Add the rest of the ingredients except for the butter, and mix well.
  • Shape into patties, and place on a baking sheet coated with cooking spray.
  • Brush patties with half the butter.
  • Bake at 350 °F (175 °C) for 30 minutes, turning halfway through and coating the other side with the butter.
