A basic Waldorf that's refreshing and light. Makes a great appetizer or snack.

- 1 medium sweet red apple, diced
- 1 stalk large celery, chopped
- 1/2 cup, seedless red grapes, halved
- 1/2 cup chopped walnuts, shelled
- 3 tbsps light mayonnaise
- 1/2 oz lemon juice
- 1/2 tsp salt
- 1 tsp freshly ground black pepper
Directions
- Whisk mayonnaise and lemon juice in a bowl.
- Combine mixture with apples, celery, grapes and lightly toasted walnuts.
- Season with salt and pepper, and toss everything til well coated.
- Refrigerate an hour before serving.
