INGREDIENTS

7 ounces Brie cheese, cut into 24 pieces
1 ½ cups arugula
2 tablespoons fig jam
24 (1/4 inch thick) slices whole-wheat baguette
2 tablespoons extra-virgin olive oil

INSTRUCTIONS

1. Preheat a panini maker to medium-high (or a skillet over medium-high heat).
2. Spread jam on 12 baguette slices, then layer each with Brie, arugula, and another slice of bread. Brush sandwiches with oil.
3. Cook in the panini maker (or in the skillet with a weighted pan on top) until golden and the cheese is melted, about 3 minutes.
