Ingredients:
- 2 cups brown rice
- 4 cups water
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup snap peas
- 1 block firm tofu, cubed (optional)
- 1/4 cup low-sodium soy sauce
- 2 tablespoons sesame oil
- 2 green onions, chopped (optional)

Instructions:
For the Brown Rice:
- Till the water runs clear, rinse the brown rice under cold water.
- Boil four cups of water in a medium saucepan.
- Reduce heat to low, cover, and add washed rice. Simmer until the rice is cooked, about 40 to 45 minutes.
- Take it off the heat and leave it covered for five more minutes. With a fork, fluff.
For the Vegetable Stir-Fry:
- Vegetable oil should be heated over medium-high heat in a big pan or wok.
